Recipe


Ingredients:

1/2 cup butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup milk

2 1/2 cup fresh blueberries


*I split the recipe amount into 1/3 as I was making only 4 muffins



Directions:

1. Preheat oven to 375°C

2. Line muffin tin with paper liners. Lightly grease paper liners with nonstick cooking spray.

3. In a large mixing bowl, use a hand mixer to cream together butter and sugar, about two minutes.

4. Beat in eggs until combined. Add in the baking powder, salt, and vanilla and mix briefly.

5. Add in half of flour, mix with a handmixer until just combined, then add half of the milk. Scrape the bottom and sides of the bowl and add in the remaining flour and milk, mixing in between additions.

6. Add the blueberries to the batter and use a rubber spatula to gently fold them in.

7. Divide the batter up amongst muffins.

8. Bake uncovered at 450°F for 10-12 minutes

9. Bake in the preheated oven for 30 minutes, until a toothpick inserted into the center comes out clean.

10. Let muffins cool for 5 minutes.

Ingredients:

2 salmon filet


2 tablespoons unsalted butter

2/3 tablespoon fresh lemon juice

2/3 garlic cloves pressed or minced

2/3 tablespoon parsley finely chopped

1/3 teaspoon salt

1/12 teaspoon black pepper



Directions:

1. Preheat oven to 450°F

2. Line large pan with baking paper

3. Place salmon fillet in pan neatly

4. Sprinkle salt and pepper over salmon

5. In a medium bowl, use a fork to mash together ingredients for flavoured butter

6. Spread evenly flavoured butter over the salmon

7. Top each salmon fillet with a slice of lemon

8. Bake uncovered at 450°F for 10-12 minutes

9. Serve onto individual plates and top with garnishing

10. Enjoy! :)

Ingredients:

1 cup zucchini

1 cup broccoli

1 cup red peppers

1 cup minced chicken breast

1 cup spring onion

1 cup flour

1 egg


Prep

1. Remove the breast meat from roasted chicken

2. Slice the breast meat into small even pieces and place in a bowl

3. Slice zucchini, broccoli, red peppers, and spring onions individually


Directions:

1. Separate each ingredient in individual bowls

2. Pour the ingredients one by one into a large mixing bowl

3. Add one cup of flour and one egg

4. Mix evenly the mixture

5. Heat up the pan

6. Add olive oil

7. Using an ice cream scoop or a round spoon, scoop of a dollop of mixture into the pan

8. Press down mixture with a spoon so it becomes a flat, round pancake

9. Fry accordingly

10. Flip the pancake when one side is done

11. Cook evenly

12. Enjoy! :)
