Recipe


Ingredients:

300g Iceberg lettuce

200g purple lettuce

2 carrots

2 tomato

500g salmon

Prep

Tear out the lettuces from the core, wash and set aside

Dice all vegetables/fruits into bite-sized pieces

Wash salmon

Directions:

1. Season salmon with pepper and salt

2. Slice the salmon skin-side with ridges

3. Heat the pan with olive oil

4. Put salmon skin-side down

5. Cook salmon

6. Toss all vegetable ingredients into salad bowl

7. Add salmon on top

8. Add in your favourite salad dressing

9. Enjoy! :)

Finally, we've reached the stage of making broccoli soup. My mom had bought 2 broccoli and only used one, so I used it to cook soup.

Ingredients:

4 tablespoons butter

2 cups broccoli florets

1 large onion

1 carrot

3 tablespoons all-purpose flour

1 cup water*

Salt and pepper

75ml of cooking cream


*you can use chicken stock instead of water, but we didn't want the chicken taste to overpower the soup



Prep

Dice all onion into large wedges

Cut carrots into slices

Chop broccoli


Directions:

1. Melt 4 tablespoons of butter in a wok over medium-high heat.

2. Add broccoli, onion, carrot, salt, and pepper and saute until onion is translucent.

2. Add flour and cook for 1 minute, until flour reaches a blond colour.

3. Add water and bring to a boil.

4. Simmer uncovered until broccoli is tender.

5. Let the soup cool slightly, before blending in batches.

6. Add cream as desired.

I had some leftover pumpkin in my fridge (from the pumpkin soup) and since it was fall, I thought it could be prime time to make a pumpkin spiced latte.


One problem though, was that I didn't have pumpkin spice powder. I thought I had saved a recipe on Pinterest that only required pumpkin puree, but when the time came, I couldn't find it...


Hence I searched online for pumpkin spice latte without pumpkin spice and modified the following recipe.


Recipe


Ingredients:

150g of pumpkin

1 and 1/2 cups of milk*

1/2 teaspoon vanilla essence

1/2 teaspoon cinnamon powder

150g maple syrup



*I used soy milk, but you can basically use any kind, vegan or non-vegan

Prep

Cut the skin off pumpkin and scrape seeds out, cut into chunks


Directions:

1. Steam pumpkin in a pot until cooked

2. Put the steamed pumpkin and milk into the blender. Blend it into a complete liquid.

3. Pour out from blender and serve in a cup. Add the rest of the ingredients.

4. Enjoy! :)
