I had some leftover tomato puree at home, so I deicided to make tomato soup to use up the puree.
In fact, this was my second batch. My mother tried the first and liked its sourish taste. She could not forget it, and asked me to make a second batch for her to taste.
Recipe
Ingredients:
4 tablespoons of butter
2 large tomatoes
2 medium-sized onions (or 1 large)
1/2 can of tomato puree
3 cups of water
1 teaspoon of salt
Prep
Dice all onion into large wedges
Cut tomatoes into wedges, making sure that the juice and seeds dont spill out
Directions:
1. Melt butter over medium heat in a large saucepan
2. Add onion wedges, tomatoes, tomato puree, 3 cups of water, and salt
3. Bring to a simmer
4. Cook uncovered, for about 40 minutes. Stir occasionally and add additional salt as needed.
5. Blend the soup in batches, and then season to taste.
6. Pour out from blender and serve
7. Enjoy! :)

The secret of this recipe is making sure that the seeds and juice from the tomato doesn't spill out when you cut it; hence only coming out when cooked, adding flavor to the soup.
You could also add a bit of cooking cream to cut through the flavour and oil of the tomato soup. It was a bit thick for me, so I added some cooking cream the second time, and it tasted just nice.
